Keto Diet Potato Salad
A delicious salad recipe that is perfect for your lunch meal:

Ingredients:
- 1 large cauliflower
- ¼ cup sour cream
- ½ cup of mayonnaise
- 2 tablespoons white vinegar
- 1 tablespoon mustard 1 teaspoon celery seed
- ¼ teaspoon salt
- 4 large hard boiled eggs*
- ½ cup diced celery
- 1 teaspoon fresh dill
- 2 stalks of green onions, thinly sliced
Method:
1. Cut cauliflower into small florets and steam for 3-4 minutes or in a steamer until cauliflower is slightly tender. Set aside to cool.
2. Make the dressing by whisking together sour cream, mayo, vinegar, mustard, celery seed and salt.
3. Stir the two reserved yolks into the cream mixture and beat until smooth.
4. Add the cooled cauliflower, cooked eggs, celery, onion and dill. Stir to coat.
5. Place in the refrigerator for about 1 hour to allow the cauliflower to cool completely and the flavors to meld. Garnish with green onion and serve cold!
